Black Bean & Avocado Salad Recipe

We had a family dinner last night.  It's always so nice to have everyone together and to be able to share a meal together.  My parents made T-bone steaks that they picked up from a new farmer.  They also made mushrooms, peppers and onions for the steaks, and baked potatoes on the side.  My mom asked me to bring chips (which we left on the kitchen counter at home) and some sort of dip.

She reminded me of a certain chip dip that I made a while ago and specially requested this one.  It's really easy to make and almost everybody loves it.





Black Bean & Avocado Salad
       -2 cans of black beans, drained & rinsed
       -1 can of whole kernel corn
       -3 tomatoes, remove all seeds & "squishy insides" then dice
       -1 small red onion, chopped fine
       -2 cloves of garlic, chopped fine
       -handful of chopped cilantro
       -zest from one lime
       -juice from one lime
       -5 TBS olive oil
       -2 tsp salt
       -1 TBS sugar
Gently combine all ingredients, cover, and refrigerate for about an hour.
Right before serving, dice up two avocados and toss those in too.
